Guys, law school is really hard. I spent almost all my time studying the law, which is mostly interesting and fun. However, it gets to be a lot. That is when I like to make fun, interesting, and easy recipes, like this one.
I got to study abroad after my sophomore year of college and took a trip to Costa Rica. We spent a few days in the cloud forest of Monteverde, which was really cool. One of the places that we had lunch served watermelon juice. Watermelon juice is sweet and refreshing, without being heavy. Also, call me a snob, but I don’t really like a lot of juice. My boyfriend loves orange juice, but I can’t stand the stuff. My grandparents used to have an orange grove in Florida, and we used to go out to there and pick oranges for our morning juice. I have clear memories of the morning sun warming my back, the big oranges hanging over my head, the red plastic wagon we used to fill, the smell of the rotten oranges that had fallen to the ground, the excitement of the day to come on the lake and the happiness of my family around me in the grove. This juice isn’t quite the same, but it’s still delicious. Also, I have a feeling a bit of vodka would go well with it.
The only thing to keep in mind is that you don’t get as much juice as you would think out of a watermelon, so this is best used when watermelon is on sale.
Makes – about 4 glasses (8 ounces) Difficulty – Easy
- 1 seedless watermelon
- 1 lime
- Cut the watermelon in half, and then slice it. Place the watermelon in a blender, and blend until smooth.
- Strain out the pulp, by securing cheesecloth over a glass (I like using a rubber band).
- Add the juice of 1 lime, and serve!
