Following this story-line, let’s talk about sundried tomatoes. They are chewy, sweet, slightly acidic, and delicious. But, if you want a to buy it at the store, it’s like $4 for a tiny jar. And, yes, $4 isn’t all that much. But, on a small budget, it certainly feels like a lot.
In comes this recipe. Oven-Dried Tomatoes. You just cut up some Roma tomatoes (because of their thick skin) and stick them in an oven at 200 degrees. Super easy. Super cheap.
- Roma tomatoes (I’ve used this recipe with three tomatoes, and 16. I think a good number is enough to warrant your oven being on for a long time. I know that that amount sounds like a cop out, but another word for that is flexible! I would buy enough to cover the baking sheets you have, about 3-4 tomatoes per. Remember that tomatoes shrink a LOT when dried.)
- A tiny amount of oil to cover the baking sheet.
- Preheat the over to 200 degrees.
- Cut the tomatoes in half. Deseed them. You can cut them into smaller strips at this point, but I would advise against it. When dried, they just become too small.
- Grease (lightly!) a baking sheet. Place the tomatoes, skin side down, on the sheet.
- Bake at 200 degrees until thoroughly dry. This may take 4-7 hours, depending on the size and thickness of tomatoes.
- Serve, and enjoy! Eat these on sandwiches, spaghetti, by themselves, or antipasto trays!
