Low-Fat Chive Cream Cheese

When I was a freshman in undergrad, there was a small little cafe on campus that was on the meal plan. It was connected to the library, and so I used to eat there at least 5 times a week. I have fond memories of studying with friends in a room in the library, eating bagels covered with chive cream cheese.

Sophomore year, they took the cafe off the meal plan, in an incident mockingly called Bagelgate. Despite the work of the Student Government Association, the cafe was never put back on the meal plan, and I stopped eating at the cafe as much. Therefore, my chive cream cheese levels became dangerously low. There is something so satisfying about creamy, tangy cream cheese mixed with savory chives and a bit of salt and pepper, all of top of a chewy bagel, especially when it is fueling a late-night study session.

This recipe is super simple and well worth the 5 minutes it takes to make.

Ingredients:

  • 1/2 cup low-fat cream cheese
  • 1/4 cup chives, chopped fine (about 10 or so chives)
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method:

  1. Combine all ingredients and enjoy. Obviously, it would taste good on a bagel, but if you want to go all out, try it in place of regular cream cheese on a Philadelphia roll.
