This recipe is for an easy fish curry. Fish curry sounds really intense and complicated, but it is not that hard. AND this recipe is super healthy and good for you! It takes about 30 minutes to cook and prep – together. It is low-carb, low calorie, and high protein! Perfect for every diet!
Ingredients – (Serves 2)
- 2 fillets pollock
- 1/2 teaspoon butter
- 1 tablespoon curry paste
- 1 teaspoons garlic
- 1 teaspoon garam masala
- 1/2 cup chopped cabbage
- 1/2 cup shredded carrots
- 1/2 cup chopped spinach
- Melt butter in a skillet over medium heat. Add garlic, curry paste, and garam masala, and heat until fragrant – about 30 seconds.
- Add cabbage and carrots, and cook until tender, about 2-3 minutes.
- Gather veggies into a pile, and place fish fillets on top. Put a lid on the pan, and cook for 6 minutes.
- Flip fish, and cook for 3-4 minutes more, or until fish flakes easily with a fork.
- Plate and enjoy!
